I would say I try to balance between catching up on necessary chores to do around the house, mixed with relaxing (usually reading or watching TV).
Given conflict between the two, I’ll opt for taking it easy, to recharge for later.
An unexpected day off probably means I’m sick. I work a 4-day week so as to have Fridays off to ‘work’ on my hobbies. For instance I finished writing a book because I have Fridays for my projects.
Any time of the year I get an extra day off, I pack in some extra reading, listen to music, and (sometimes) watch some more streaming TV than usual. If the extra time not during the winter, I also spend more time in my garden.
I’ve never had an unexpected day off. Even most of my planned vacation days involve me working.
