Well, obviously the answer is nothing. Mankind existed for thousands of years without apps. In particular, I lived over half my life without any apps.
But to answer the spirit of the question, I’ll say GPS. It has profoundly changed how we navigate.
I frequently use the Photos app to look at pics when I need joy. In fact, I have a couple of slideshows specifically for this purpose.
I could be fine without a mobile, as there’s always another way, but online banking is the one app I find most critical.
Lee’s answer of GPS is very good and I agree to a degree, however I was a map lover since my childhood, so I’m never against paper maps. I even did bike tours before small GPS devices were a thing, with turn-by-turn direction on flip pages, mounted to the handlebars.
